How to spatchcock a chicken

To spatchcock a chicken, place it on a board breast-side down.

Using poultry shears or good strong scissors cut down either side of the backbone, remove and discard it.

Turn the bird over on the board and press down on breast side to flatten out the chicken.

Tip: Put backbone in a zip-lock bag and freeze until later, every time you have bones add to bag and freeze until you have enough to make a delicious bone broth
